Blanca Escobedo is an undergraduate double majoring in environmental policy analysis and planning and international relations. UC Davis courses such as economic development and environmental law have piqued her interest in economic sustainability and environmental justice. As a Tulare County native, Escobedo is excited to return to the Central Valley after graduation and advocate for change within underserved communities. As a Bradshaw Scholar, she is excited to work with Dr. Keith Taylor in the UC Davis Department of Human Ecology on the possible role of food-cooperatives within food deserts and other areas of food inaccessibility.
